Black Bean Soup

Ingredients
2 Tbs. Vegetable oil1/2 cup chopped Carrots1/2 Cup Chopped celery1/2 cup chopped onion2 Cans (10 oz. ea) Ro-Tel Chunky Diced Tomatoes and Green chilies3 cans Ranch Style Black Beans (undrained)1 cup (11oz) Mexican-style Corn1/4 cup fresh minced Cilantro
Directions
Heat oil in Dutch oven over medium heat; add carrots, celery and onion. Cook about 15 munites or until tender. Add 2 cans RO-TEL, 3 Cans black beans (undrained) 1 can Mexi-corn. Heat to boil. Reduce heat and simmer 20 minutes. Blend in 1/4 cup fresh cilantro. 6-8 servings.
