Ginger Fried Rice

Ingredients
2 T soy sauce (gluten free tamari)1/2 t sugar1/4 t pepper2 T vegetable oil2 eggs, beaten1/2 lb ground turkey or chicken1 medium carrot, finely chopped1 celery rib, finely chopped1 scallion, chopped1 small bunch of broccoli, finely chopped1 t minced fresh ginger1 garlic clove, minced2 cups cold cooked brown rice
Directions
1. In a small bowl, combine soy sauce, sugar and pepper; set aside.

2. In a large skillet, heat oil. Add eggs and cook over medium heat, stirring constantly, until eggs are soft-set, about 45 seconds. Transfer eggs to a bowl and set aside.

3. Add ground turkey, carrot, celery, and scallion to skillet and cook over medium heat, stirring often to break up lumps of meat, until turkey is cooked through, about 3-5 minutes. Add broccoli, ginger and garlic and cook, stirring often, 1 minute.

4. Increase heat to high, add rice, and stir-fry until heated through, about 1 minute. Add soy sauce mixture and stir-fry 30 seconds longer.
