Sicilian Lentil Soup

Ingredients
4 cups vegetable broth1/2 cup onion, chopped1/2 cup carrot, grated1/2 cup celery, chopped3 cloves garlic, minced1 can chopped tomatoes1/2 cup water1 cup lentils, dry1 bay leaf1/2 tsp pepper1 tsp oregano1 tsp basil1/2 cup orzo pasta
Directions
Use 1tbsp of vegetable broth to fry onion, celery, carrots, and garlic. Add can of chopped tomatoes, vegetable broth, water, lentils, bay leaf, pepper, oregano and basil. Cook for 30 min on medium low and then add orzo pasta. Cook until pasta is soft.
Makes approximately 6 1-cup servings.

    Mmm Mmm, good! I doubled the recipe, omitted olive oil, used diced fire-roasted tomatoes, chopped carrots instead of grated, 4 beef bouillon cubes (that's all I had) and put the ingredients (except for the pasta) in the crockpot. Cooked it on low all day, & added pasta an hour or so before we ate. - 2/11/10
