Mussels In Tomato Wine Sauce

Ingredients
1 lb raw mussels in shells3 Tbsp minced garlic3 cups diced tomatoes1 cup minced onion1/2 cup white wine1 Tbsp basil1/4 tsp black pepper1/4 cup dried parsley1 tsp olive oil1 Tbsp vegetable broth
Directions
Remove beards on mussels and scrub shells with a brush. Discard open, cracked or heavy mussels (they are filled with sand). Set aside mussels.

Heat oil and vegetable broth in a large saucepan over medium-high heat until hot. Add onion and garlic; saute 4 minutes or until tender. Add tomato and wine; bring to a boil. Add mussels, basil and pepper. Cover and reduce heat to medium-low and simmer 3 to 5 minutes or until mussels open. Discard unopened mussels. Serve immediately.
