5 oz chicken breast1 tablespoon cornstarch1/4 fat free egg substitute2 tbs finely chopped almonds
1) Sprinkle each side of the chicken breast with cornstarch. Dip the breast into the egg substitute to coat and then sprinkle with almonds

Coat a small nonstick skillet with nonstick cooking spray and heat over med heat. Cook the chicken for 5 min on each side or until a thermometer inserted in the thickest part registers 165F.

Excellent! Did it in the oven though rather than stove top - 350 degrees for 30 minutes, and sprayed the top with PAM as well. Thanks for sharing! Will most certainly enjoy my leftovers at lunch tomorrow!
