Swedish Rye Bread

Ingredients
4c flour1c rye flour, dark3 tbsp Brown Sugar1/2 c sorghum (NOT molasses)1.5 c nonfat milk scalded (2 min. in microwave)2 tbsp butter1 tsp salt2 tbsp gluten (helps it to rise good)2.5 tsp yeast2 tsp caraway (optional)
Directions
Makes a 2 pound loaf. If you have a bread machine bake on light. If you do by hand then let rise until double (less than an hour), punch down and let rise again, shape into loaves and let rest 15 minutes then bake on 375 for 45-50 minutes until golden brown. This is VERY good toasted with raspberry jam and for ham sandwiches!

Once out rub the top with butter.

    Great flavor . I reduced the portions by 1/3 and made it in the bread machine and this worked well. - 10/2/11
