Easy egg Free Rice Pudding

Ingredients
2.5 cups 1% Milk1/2 cup Water3/4 cup arborio rice 1/4 cup sugar1/4 salt1Tbs (or to taste) Vanilla
Directions
Mix 2 cups milk .5 cup of water with rice, over high heat bring to just a boil - careful not to burn. Turn down to low/medium and cover, simmer untill most of water is absorbed (takes 15-20 mins). Stir in the sugar, salt, vanilla and other .5 cup of milk. Cook untill desired consistancy (about 10 more mins stiring for a nice creamy texture). Makes 6 generous .5 cup servings, sprinkle cinnamon on top and enjoy :)
