Cinnamon Muffins (Joy of Cooking)

Ingredients
Whisk together thoroughly in a large bowl:2 cups all-purpose flour1 tablespoon baking powder1/2 teaspoon salt1 teaspoon cinnamon1/4 teaspoon ground nutmegWhisk together in another bowl:2 large eggs2 cup milk or cream (I use 2% milk)2/3 cup packed light brown sugar1/4 cup of canola oil - recipe states that if you are not going to eat the following day to increase the oil to 1/2 cup to keep them moist overnight.1 teaspoon vanilla
Directions
Bake at 400 degrees for 17 minutes or until a toothpick inserted comes out clean. Makes 12 muffins.
