Orange Pepper Frittata

Ingredients
2 extra large eggs4 servings of egg whites1/4 C grated or shredded parmesan cheese2 Tbsp nonfat milk3/4 tsp salt1/2 tsp ground black pepper1 Tbsp butter1 Tbsp olive oil1/4 of a red onion, minced1 orange bell pepper, finely chopped1 Tbsp finely minced fresh thyme
Directions
Beat together eggs, milk, and parmesan. Stir in salt and pepper and set aside.

In a skillet or frittata pan, elt butter with olive oil. Saute bell pepper and onion till soft. Stir in eggs, lifting edges with a spatula and allowing egg mixture to run under and set. Cook about 5 min and flip (using top of frittata pan or by inverting on a large plate).


Cook until second side is set. Garnish with fresh thyme and serve
