Minnie's Muffins

Ingredients
1 cup of rolled oats1 cup of milk1/2 cup dark brown sugar1 egg2 small apples peeled and cored1 cup whole wheat flour1 tsp baking powder1/2 tsp salt1/2 tsp baking soda3 tbsp cinnamon1 tbsp nutmeg
Directions
1. Soak Oatmeal in milk for one hour

2. Cut apples into small chunks and microwave for a couple of minutes.

3. Puree in Magic Bullet or similar device

4. Mix with other wet ingredients

5. Mix together dry ingredients

6. Make well in center and poor in wet ingredients. Do not over stir.

7. Line Muffins tins with paper or grease well.

8. Bake at 400F for 20-25 minutes.

Makes 12 medium size muffins
