1/2 onion, chopped 1 medium red potato 1 medium yukon potato1/3 cup baby carrots, cut in half1/3 cup mixed bell peppers, cut into strips1/4 tsp salt1/4 tsp black pepper1 tsp garlic powder1 tsp olive oil
Preheat oven to 350 degrees. Spray baking dish with cooking spray and set aside.
Cut up onion and potoates into cubes and put into a large ziploc bag. Add carrots, bell peppers, salt, pepper, garlic powder and olive oil to bag; seal and shake to mix everything together. Empty vegetable bag into the prepared baking pan. Bake in preheated oven for 30-35 minutes.
