Chick Pea and Zucchini Hummus with Parm

Ingredients
*Chick Peas, 1 cup (remove)Zucchini, 1.5 cup, sliced (remove)*Lemon Juice, 1 lemon yields (remove)*Frigo Fresh Shredded Parmesean Cheese, 0.25 cup (remove)Olive Oil, 4 tbsp (remove)Garlic, 2 cloves (remove)
Directions
Cut up the zucchini and and peel the garlic. Toss in 1 tablespoon of olive oil and roast in 350 degree oven for about 10- 15 minutes.

Drain and rinse chick peas. Combine the chickpeas, zucchini and garlic, and parm in a food processor or blender. Squeeze in lemon juice. Process until a thick paste forms. Drizzle in 1-2 tablespoons of oil and process until thick and creamy. Add salt and pepper to taste.

Serve with cut up veggies, crackers, or pita.

Makes eight 1/4 cup servings.
