Ingredients
6 Egglands Best eggs3 TBS heavy whipping cream1 tsp onion powder2 TBS frozen chopped spinach, thawed1 1/2 oz. shredded part skim mozzarella cheese1 TBS Bac-o bits1 tsp olive oilsalt n pepper to tastemakes 6 servings
Directions
Preheat oven to 350. Swipe 9x2-inch cast iron skillet with olive oil.
Whisk eggs and whipping cream, add all other ingredients, whisking together briskly.
Pour into skillet and bake about 20 minutes until poofy and firm in the middle, slightly brown around the edges.
Pull out of oven and let cool about 10 minutes before slicing. It will fall and be warm to the touch on top.
