Tuna Melt

Ingredients
5 oz chunk light tuna drained5 oz canned chicken breast drained1 med. shallot, minced2 T. lowfat mayo1 T. lemon juice1 tsp. minced parsley (dried)dash of salt and pepper4 slices of wheat bread8 slices of tomato.5 C. fat free shredded cheddar
Directions
1. Preheat broiler.

2. Combine tuna, chicken, shallot, mayo, lemon juice, parsley, salt, and pepper in a small bowl. Spread 1/4 of the mixture onto each slice of toast; top with tomato slices and 2 T. cheese. Place sandwiches on a baking sheet and broil until the cheese is bubbling and brown.
