Family Night Meatloaf

1 medium yellow or white onion, chopped1 large bell pepper, rinsed, seeded, and chopped6 cloves of garlic, peeled and chopped2 small ribs of celery, rinsed and chopped2 carrots, peeled and chopped2 pounds lean ground beef2/3 sleeve of saltines, crushed3 eggs, beaten1 tsp. each salt, fresh black pepper, and dried thyme1/2 tsp. cayenne pepper
Preheat oven to 350 degrees Fahrenheit. Spray two loaf pans with non-stick spray. Process vegetables in food processor until very finely shredded. Beat eggs in a large bowl. Mix in vegetables and seasonings. Blend in ground beef. Mix very well. Add cracker crumbs. Blend in well. The juices from the processed vegetables should give enough liquid, along with the eggs. You can add a small amount of tomato sauce or ketchup to increase the moisture, if you like. Bake for one hour at 350. Let stand for 10 minutes before slicing. Makes 10 servings. Enjoy!
