2 crabs - I use mud crabs (Australian) but dungeness crabs are similar nutritionally.2 tbs Olive oilSalt Pepper1 clove garlic1 hot chilli pepper1 fresh lemon1/4 tsp chinese five spice (optional)
If using fresh (live) crabs, prepare them as follows:
1. Put them in the freezer for 1 hour to put them to sleep.
2. Submerge each crab in rapidly boiling water for 5-10 minutes.
3. Clean the crabs, removing the gills and guts. Separate and crack the claws and legs and quarter the bodies with a heavy knife. Cover and chill the prepared crabs. If you're cooking for guests and don't want to be all crabby and stinky, you can do this part ahead of time.
To make the recipe:
1. Finely chop the chilli and garlic and fry in the olive oil on low-medium heat until fragrant but not brown.
2. Add salt and pepper to taste and a small pinch of chinese five spice (optional).
3. Add the crab and saute until hot and completely cooked.
4. Serve with lemon cut into wedges.
To make this a complete meal, serve with a side salad and/or rice or fresh bread.
Serving size: 1 crab per person. If you have one really big crab, share it between 2 people.
