Lightened Hummus

Ingredients
1-1/2 c. cannellini beans (or 1 can drained & rinsed)1-1/2 c. garbaanzo beans (or 1 can drained & rinsed, reserve 2 T juice)1/4 c. tahini12 oz firm tofu, blot dry, but no need to press3 cloves garlic, peeledjuice of one lemon1/2 t. saltpinch cayenne pepper
Directions
Start the food processor with the steel blade, and with machine running drop in the garlic cloves one at a time.

Stop machine and add all other ingredients, including 2 T of cooking juice from the garbanzo beans, and process until smooth.

Makes 8-1/2 c. servings.
