Sunday Morning Omellette

Ingredients
8 large eggs, beaten1/4 cup red onion, finely chopped1/3 cup green pepper, finely chopped1 cup fresh spinach, finely choppeda dash of salt1/2 cup shredded cheddar cheese to garnish
Directions
Mix all ingredients in a large bowl while skillet is heating on medium low heat. Pour into skillet when a drop of water sizzles in the pan.

This can be made as an omellette (folded in half after the bottom half is cooked) or is just as delicious scrambled.

Top with cheddar cheese (included in calorie count as 1/8 cup per serving) on your plate and enjoy!
