Molasses Bran Muffins

Ingredients
2.5 cups Whole wheat Flour2 cups Wheat Germ1 cup packed Brown Sugar1 cup Raisins2.5 tsp Baking Soda0.5 tsp Salt2 cups 2% Milk2 lg Eggs1 tsp Vanilla Extract0.25 cup Oil1 tbsp Molasses
Directions
Mix all dry ingredients.
Shake oil, eggs and Vanilla together.
Add milk and shake well.
Add wet ingrdients to dry - mix well.
Spoon into line/greased muffin pans
Bake for 20-25 mins @ 180 deg C
Makes 24 cupcake sized muffins.

    Very interesting flavor; I can really taste the wheatgerm. I substituted eggwhites for the eggs and applesauce for the oil to reduce calories, and baked at 400F for 18 minutes. - 8/14/07

    We've been making these for a few years now. Was a time I sold them too. They are quite yummy. I'm also one to substitute ingredients often. Keeps things fresh (no pun intended).
