Quorn Stir Fry

Ingredients
2 tbsp Olive oil1tbsp tomatoe puree1tbsp soy sauce1tbsp root ginger1tsp ground ginger2 garlic cloves4 Quorn fillets2 courgettes (sliced)4 carrots (sliced)1 red pepper (cut into strips)4 celery sticks (Sliced)
Directions
Mix 1tbsp of olive oil with the tomatoe puree, soy sauce, root ginger, ground ginger and garlic. Chop the quorn fillets into chunks and add coat with mixture. Leave for 20 minutes to marinate.
Once marinated, stir fry the mixture for 3 minutes in the remaining oil, then add veg and stir fry for 5 minutes. Serve with brown rice or noodles. Makes 4 good size portions
