Baked Lemon Pudding

Ingredients
2/3 cup Sugar2 tbsp Flour3 Eggs1 cup 1% milk1/3 cup lemon juice1 tbsp butter
Directions
Throw all ingredients into the blender, and mix until smooth. Pour into a nine ince ungreased pie plate. Bake for 30 minutes. Serves 6.

    This stuff is great! I'd call it a custard rather than a pudding, but it's delicious by any name. Not to mention full of protein.
    I'm bad about overcooking things, so I baked this in a dish inside another dish of hot water. I set the oven to 350 degrees. Came out perfect and evenly cooked. - 1/22/12
