Slow Cooker Hearty Cassoulet

1 tablespoon olive oil1 large onion, finely chopped4 boneless skinless chicken thighs, chopped1/4 lb italian sausage, finely chopped3 cloves garlic, minced1 tsp dried thyme1/2 tsp black pepper4 tablespoons tomato paste2 tablespoons water3 cans Great Northern Beans, rinsed and drained1/2 cup dry bread crumbs3-4 tablespoons fresh parsley, minced
Heat oil in skillet. Add onion and cook until translucent. Add garlic, cook an additional minute. Add chicken, sausage, thyme and pepper. Cook until chicken and sausage are browned.
Remove from heat and add tomato paste and water until blended. Pleas beans and chicken mixture into slowcooker. Cover and cook for 4-4.5 hours on LOW.
Before serving, combine bread crumbs and parsley and sprinkle on top of cassoulet.
