Stevia Banana Muffins

Ingredients
2 1/2 Ripe Bananas1 C Whole Wheat Flour1/2 C Flaxseed Meal1/2 C Egg Beaters1/3 C Rice Dream Vanilla Rice Milk1/2 Cup Pureed Fresh Pumpkin or Canned Pumpkin3 TBS Brown Sugar1 TBS Stevia1 tsp Pure Vanilla ExtractDash of Salt
Directions
Mix Bananas, egg beaters, rice milk, pumpkin, brown sugar, stevia, vanilla, and salt until well blended; add flour and flax meal, mix well. Use approximately 2.5TBS per muffin and bake at 350. I lightly greased my pan with olive oil. I also baked mine for 12 minutes, but you may need to adjust this for your oven.
