Quick & Easy Chicken Quesadillas

Ingredients
1 Chicken Breast (1 serving size)Salt & PepperDash of Chili PowderPinch of CilantroDash of Cumin1/2 Lemon4 Large Flour Tortillas1 pkg (8oz) Shredded Cheese1/2 Onion ChoppedSalsaReduced Fat Sour Cream
Directions
Cut Chicken breast into 3 pieces. Place in microwave save bowl. Sprinkle with cumin, chili powder, cilantro salt & pepper. Squeeze lemon juice over chicken and place (covered loosely) in microwave. Cook for 2-3 minutes (until no longer pink inside). Shred chicken using 2 forks. Add onion, cheese and 1/4 cup salsa. Spray large pan with oil on med heat. Place one tortilla in pan. Put 1/2 chicken mixture on tortilla and spread evenly. place tortilla on top and cook until brown on both sides. Repeat with remaining ingredients. Cut each quesadilla into 6 wedges. Top with salsa and sour cream. Serves 6 (2 wedges each)
