Lemon-Orange-Cranberry Muffins

1 lemon cake mix1-4ounce cup unsweetened light applesauce3/4 cup liquid egg whites (or whites of 6 eggs)1/2 cup dried cranberries1 1/4 cup waterzest of one orange
Directions
Mix ingredients together, place in muffin cups bake 17-22 minutes. Yields 24 servings

    These are very tasty! I would make sure to spray your muffin tin though. I used cupcake papers and they stuck really bad, so next time I'll use a little bit of pam on them. I will definitely be making these again!! - 4/18/10
