Ingredients
1 cup minute rice1 cup chicken broth1 large eggChoice of seasonings
Directions
Make the minute rice using boiled chicken broth instead of plain water. Heat skillet over medium heat and spray with cooking spray. Add rice and heat it up for about a minute or two. Then push rice to the outside of the pan to make a circle with an opening in it. Whisk egg in bowl and dump into opening. Stir until scrambled then combine the egg and the rice in skillet. Add seasonings as desired; I prefer garlic powder, onion powder, salt and pepper. Makes about 4 1/2 cup servings!

Delicious! I made this tonight with Miss Mary's Terakyi Chicken... it was a great substitute for fried rice, and I used an egg beater egg for a sub. - 5/13/08
