Jenny's Veggie Suprise Soup

-1 collard gree leaf (chopped)-1.5 medium yukon potatos (chopped)-1 celery stalk (chopped)-3 garlic cloves (pressed)-1/2 med. onion (diced)-1 tbsp evoo-4.5 cups water-1 Vegan Vegetable Bouillon Cube-1 tbsp white miso paste- 3 oz Firm Tofu (chopped)-sea salt & pepper to taste
In a large pot add onion, garlic and evoo. Simmer for 2-4 mins until onions are almost clear. Add Collard greens and mix well. Let simmer for another few minutes and then add the rest of the vegetables, water and bouillon cube. Cook until potatos are done (about 20 mins). Remove from heat and add miso and salt and pepper. mix and serve
