Herbed Potato Soup

Ingredients
1 Large Onion - Diced4 Tbsp. of Margarine1/4 C. of all-purpose flour1/2 Tsp. of Thyme1/4 Tsp. of Rosemary1 12oz Can of Evaporated Non-Fat MilkSalt to tastePepper to Taste2 Large Potatoes, peeled and diced3 C. of Water
Directions
Boil potatoes in water until soft (about 20 minutes)

Saute diced onions and butter until onions are soft.
Add Flour and stir
Add Rosemary and Thyme and stir
Add salt and Pepper
Stir in slowly Evaporated Milk
Bring milk and ingredients to a boil. boil for 2 minutes or until thick.


Blend potatoes and liquid in a blender, in batches, until smooth. Pour potato mixture into milk and heat through about 2 minutes.
