Buckeye Truffles

Ingredients
1/2 cup Natural Peanut Butter (or almond/soy for allergies)1/2 cup Powdered Sugar1 tablespoon vanilla extract1 cup dark (60%) chocolate baking bar
Directions
1. Lay down parchment paper on a half sheet pan and spray it with cooking spray
2. Melt peanut butter in microwave (only takes about a minute)
3. In a small mixing bowl add powdered sugar and vanilla to peanut butter
5. Stir until reaches dry crumbly consistency
6. In a microwave or double boiler(read your instructions), melt the dark chocolate
7. Form teaspoon size balls from peanut butter mixture
8. Drop the balls into the dark chocolate and then scoop or fish out with spoon and drop onto paper
*Hint: Make small circles with the chocolate on the paper so that when you drop the balls, they will get a coating all around
9. Repeat until all are covered
10. Let cool and harden in refrigerator

    to look like a buckeye, you can stick a toothpick in each ball and freeze it for 1 hr, them dip into melted chocolate ,3/4 of way up, leaving lighter color at top, like a real buckeye.
