Wintertime Chili

Ingredients
*One medium-large butternut squash, peeled and cubed*2-3 large carrots, peeled and chopped*One mediumish onion, chopped*One big can black beans (16 oz)*2 cans fire roasted diced tomatoes (28 oz)*2 tsp-3 tbs chili powder, depending on how you like your chili*One cup chicken or vegetable broth (nutirition info based on chicken broth)*One tsp salt, optional
Directions
Layer all ingredients in order in large crockpot. Cook on low 6-8 hours. Serve with a dollop of low-fat sour cream if your diet allows. Makes 6 big bowlful servings :)
