German Style Cinnamon Almonds

1 lb Raw Almonds (you could also use other nuts like pecans and cashews)3/4 cup sugar1 Tbsp cinnamon1/2 Tbsp nutmega pinch of cloves1/2 cup water1 Tbsp vanilla extract1/2 Tbsp orange extract3 Tbsp water
In a small bowl, mix vanilla, orange extract and 3 Tbsp water and set aside for the last step of the recipe. Combine sugar, nuts, water and spices in a sauce pan over medium-high or high heat. Use a sturdy wooden spoon for stirring. Wear gloves if possible because you will be stirring over this heat for a long time and it will get very warm.
Stir the nuts for about 10 minutes constant..........the mixture will turn into powder coated nuts......don't stop there.......continue to mix the nuts and some of the sugar will start to re-melt and when the nuts looks like they are half wet and half dry turn the heat off and continue to stir for another 2 minutes.
When that 2 minutes is up, pour the vanilla, orange extract and water mixture over the nuts and stir them until they look nice and shiny. Then pour them onto a wax paper sheets and let them cool or just eat them warm. YUM!
Of course I would recommend separating the 16 servings first otherwise you will eat them all up and forget to calculate the calories.
