Spinach Feta Scramble

1/2 cup - Tomato, diced1 cup - Spinach Leaves, cleaned and dried1/2 cup - Egg Substitute1 l /2 ounces - Reduced Fat Feta Cheese, crumbled1 tablespoon - Fresh Basil, chopped
1) In a small nonstick pan coated with vegetable spray, saute tomatoes and spinach over medium low heat until slightly tender. Remove and set aside.
2) Add the egg substitute to the pan. Cook, stirring, over Low heat until almost set. Add the vegetabte mixture, cheese, basil, and onion and garlic powder. Cook to desired firmness.
Sprinkle with Salt if desired.
