Minestrone Soup

Ingredients
1 cup chopped carrots1 cup chopped onions1/2 cup chopped celery1 cup shredded cabbage1 tsp garlic2 tbsp olive oil 4 cups vegetable broth 14.5 ounce can diced tomatoes 2 cups water 4 ounce barilla plus penne14.5 ounce can great northern beans
Directions
Saute carrots, onions, celery, cabbage and garlic in olive oil. When soft, add in broth, diced tomatoes, water and spices. Cook to a boil and then simmer for 10-15 minutes. Add in beans and pasta and cook until pasta is al dente. Salt and pepper to taste (not included in nutrition). 8 1-cup servings.
