Ham & Potato Cheese Soup

Ingredients
1/2 stick butter1/2 Cup flour2 Cups Potatoes cubed2 Cups Ham cubed32 oz of Chicken Broth1 TBSP minced onion2 Tsp garlic powder2lbs Velveeta Cheese Sliced2 Cups Half and Half at room temp
Directions
In a large kettle melt the butter and flour to make a rue, add the chicken stock and bring to a boil.
Add the minced onion,garlic powder and potatoes and bring back to a boil. Cook until potatoes are soft.
Add the Velveeta cheese and stir until it is all melted.
Add the ham and room temp half and half.
Simmer for about 30 minutes and serve.

You may also use broccoli or cauliflower instead of the ham and potatoes.
