Quinoa with Mushrooms and Spinach

1 Cup Quinoa seed2 Cups water1 Tablespoon olive oli1 onion Chopped1 C mushrooms sliced 2 cloves garlic pressed1 pac (8oz) fresh spinach
Rinse the quinoa and place in pot with water. BRing to Boil. Cover and simmer 15-20 minutes until water is absorbed. While Quinoa is cooking, Saute the onion, mushroom and garlic in oil. Just before adding the cooked Quinoa, add the spinach and saute until just wilted. Add the Parmesan cheese and combine. Serves 4 as a main dish.
