Sweet & Healthy Rhubarb crisp

8 C. Rhubarb, finely chopped (approx. 2 lbs.)1 C. Brown Sugar, packed1 C. Domino Pure D'Lite (or Splenda Baking)1/2 C. FlourTopping:1 C. Oats1/2 C. Whole Wheat flour1/2 C. Brown Sugar1/4 C Canola Oil1/2 C ApplesauceCinnamon to taste
Trim ends, wash and chop rhubarb. I like to use very young stalks. If you use more mature stalks and don't like the texture, slice them lengthwise before chopping. Combine the dry ingredients then add the rhubarb.
Coat a 9 x 11 pan with cooking spray. Add the fruit mixture.
Combine ingredients for the topping and spread over the fruit.
Bake at 350* for 60 -75 mins. The crisp is done when the fruit is bubbly and shiny.
Experiment with the sugars to get it as sweet or as tart as you like it. The way I make it, it is quite sweet. You can cut calories by reducing the sugars.
