Greek Lentil Soup

Ingredients
About 2 cups of dry lentils, cleaned4 cups water (plus extra)1 medium onion, chopped3 cloves garlic, chopped4 tbsp olive oil1 tsp dried oregano2 whole bay leaves (do not crush leave whole)salt to taste1/4 cup tomato sauce1 tbsp red wine vinegara dash of cayanne pepper to taste to add some kick!
Directions
Clean lentils and rinse thorougly. Add lentils to a large pot, add enough water to cover lentils well. Bring to boil. Drain water and rinse lentils. Add lentils back to pot, and add 4 cups water, and remaining ingredients. Cover, bring to a boil, then reduce heat to a simmer. Simmer covered for 1 hour, add more water if necessary. Soup should thicken slightly.
