Amaranth with Raw Veggie's Salad

Ingredients

1/2 c Amaranth1 1/2 c veggie broth3c. fresh spinach1c. celery1c. sweet bell pepers, red1/2 c cilantro1/2c green onions1c. garbonzo beans, cooked3 grated carrotsjuice of 1 lemon4T walnut oil1 T cuminS&P to taste
Boil 1/2 c Amaranth in 1 1/2 c veggie broth
Mean while chop:
3c. fresh spinach
1c. celery
1c. sweet bell pepers, red
1/2 c cilantro
1/2c green onions
Mix together in large, non-reactive bowl and then add:
Cooked Amaranth
1c. garbonzo beans, cooked
3 grated carrots
juice of 1 lemon
4T walnut oil
1 T cumin
S&P to taste
mix well and let set for several hours or over night in the fridge to let flavors combine!
