Carrot Oatmeal Cookies

Ingredients
1/2 cup butter or margarine1 cup sugar1 large egg1 cup grated carrots1/3 cup skim milk1 tsp. vanilla2 cups whole wheat flour2 cups rolled oats2 Tsp. baking powder1/4 Tsp. salt1 tsp. cinnamon375F for 12-15 minutesCream butter and sugar. Add egg. Add carrots, milk and vanilla. Stir in remaining ingredients. Mix well. If mixture is too dry add a couple tablespoons of water. Drop by spoonfuls on a greased cookie sheet and cook. Frost if desired. You can add 1 cup of raisins but this is not calculated in the nutritional value of the recipe.

    I used brown sugar; 1/2 cup extra aded to second cookie sheet made them very good IMHO. - 8/28/10
