Jodi's French Toast

Ingredients
8 slices whole wheat bread (Strohman's Family Grains used to calculate nutritional info)2 large eggs3 large egg whites1/2 cup Vanilla Rice Dream (Rice Milk)1 tsp. vanilla extract1/4 tsp. cinnamon, groundCooking Oil SprayToppings as desired (not included in nutritional info): low or no-cal syrup, fresh fruit, a little powdered sugar.Nutrition figures are per slice of french toast without toppings or syrup, and figured using the above bread which has 75 calories per slice.
Directions
Makes 8 slices of french toast.

Mix eggs, egg whites, vanilla, and cinnamon well and pour into a shallow pan. Preheat and spray non-stick pan with cooking spray before each batch of frying. Dip slices of bread into batter to coat each side evenly, but lightly.
Fry to golden brown on each side.
