Mushroom Herb Chicken

Ingredients
Ingredients:Chicken Breast, no skin, 24 ounces (remove)Salt, .25 tsp (remove)*Shallots, 2 tbsp (remove)Mushrooms, fresh, 1 cup, pieces or slices (remove)*Dry Sherry, 2.6 oz (remove)*Spice, Marjoram (dried), .25 tbsp (remove)*Fresh Ground Black Pepper, 0.25 tsp (remove)
Directions
Place each chicken breast between heavy duty wrap and pound to 1/3" thickness . Sprinkle with salt and 1 t. pepper. Coat with cooking spray. Heat a large nonstick skillet over medium high heat. Add chicken to pan. Cook 5-6 minutes on each side, or until brown.
While chicken cooks, cut shallots vertically into thin slices. Remove chicken from pan. Coat pan with cooking spray. Add mushsrooms and shallots to pan; coat vegetables with cooking spray (I.e. leftover mashed potatoes, and broccoli) Cook 1 minute stirring constantly . Stir in sherry and marjoram. Return chicken to pan; cover and cook 3 to 4 minutes or until mushrooms are tender and chicken is done. transfer chicke n to platter. Pour umushroom mixture over chicken; sprinkle with freshly ground pepper.

Yield: 4 servings. Serving size 1 chicken breast half and 1;3 c. mushroom sauce.
