Easy Veggie Pasta

Ingredients

2 oz. dry whole wheat pasta1 cup low-sodium vegetable broth (or chicken broth)1 cup frozen mixed vegetables 1/4 cup shredded part-skim mozzarella cheesefresh ground pepper
Place vegetable broth in a small saucepan and bring to a boil. Let broth boil rapidly until reduced by about 1/2.
Cook pasta according to package directions and drain.
Add the frozen veggies to the reduced broth and bring back to a boil. Cook for 3-5 minutes, until veggies are cooked through.
Add pasta to broth/veggie mixture and season to taste with black pepper. Top with mozzarella cheese. Makes one serving.
