My Spaghetti sauce (MEATLESS)

Ingredients
Directions
1/2 c canned diced Italian Tomatoes1 c canned tomato sauce1 c chopped red bell pepper1 c sliced zucchini squash1 TBsp dried Italian herbs (more or less to taste)2 minced/diced garlic cloves (I LOVE garlic!)1 diced medium onion10 sliced med fresh mushrooms1 TBsp extra virin olive oil

1. sautee onion, diced garlic cloves and red pepper in olive oil until tender
2. add canned diced tomatoes and sauce start the sauce to simmer.
3. add dried Italian herbs ( use fresh oregano and basil if you can afford it and add to taste)
4. mushroom slices simmer till done
5.add zucchini and cook til JUST tender.
How's it taste? change and experiment as needed. This is just my idea as a base chunky style veggie spagetti sauce.

For protein add a cup of small cubes of tofu veggie dish
add turkey Italian sausage for flavor 1/2 serving per person

Thank you for the fed back. I made this start of a recipe for myself but haven't used it yet. I have store bought still. I am in my first week of SparkPeople and learning as I go. Must be doing something right I woke up STARVING and ate breakfast and still feel hungry. Drinking water.
