Refrigerator Bran Muffins

Ingredients
1 (15 ounce) package raisin bran cereal5 cups all-purpose flour3 cups sugar1 tablespoon plus 2 teaspoons baking soda1 teaspoon salt4 eggs, beaten1 quart buttermilk1 cup shortening, melted
Directions
Combine first 5 ingredietns in a large bowl; make a well in center of mixture. Combine eggs, buttermilk, and shortening; add to dry mixture, stirring just until moistened. Cover batter and store in refrigerator up to 6 weeks. When ready to bake, spoon batter into greased muffin pans, filling two-thirds full. Bake at 350 for 20 minutes. Remove from pans immediately. Yeild: about 5 1/2 dozen.
