Yellow Split Pea Soup

1 Onion2 Carrots2 Celery Stalks3 Turnips (or 1 large - about 1 cup chopped)8 Cups veggie broth (or water)Salt and Pepper to taste
Chop the carrots, celery and onions into a 1/2 in dice. Cube the turnips.
Heat the oil in a stock pot over medium heat. Add the veggies except for the turnip. Saute for 5-6 minutes.
Add the peas and water, bring to a boil and simmer for 20 minutes. Add the turnips and simmer for 20-30 minutes or until the peas are soft.
