1 pound boiled and strained blackeye peas1/2 pound grilled and strained turkey bacon3 chopped ripe tomatoes (any large variety)3 chopped stalks of celery3 chopped green onions6 cups lettuce (romaine, spring mix, any variety)Mustard Vinaigrette:1 tbsp dijon mustard2 gloves garlic1/4 cup balsamic vinegar1/3 extra virgin olive oil

boil 1 lbs. black eye peas in 8 cups of water about 30 minutes.
