Szechuan Noodles

Ingredients
6.5 oz Barilla whole grain thin spaghetti1/4 c soy sauce1/4 c balsamic vinegar 1/4 c water1/2 c reduced fat creamy peanut butter 1 tsp hot sesame oil1 tsp sugar1 tsp crushed red pepper1/2 tsp fresh or powdered ginger
Directions
Cooked Angel Hair pasta according to instructions.

While pasta is cooking, mix all ingredients except sweet and low and pasta. Microwave 20 seconds. Mix, and microwave 20 seconds longer. Add sweet and low and water as needed.

Mix into cooked noodles.

Can be eaten at room temperature when freshly made, or cold the next day.

    This was absolutely delicious. I omitted the sugar/sweet&lo and found that the peanut butter provided just the right amount of sweetness. I also added chopped green onions. The sauce is more than enough for the pasta specified. I would suggest just adding the amount of sauce that you like. - 1/20/10

    I ate this dish mixed with stir-fry vegetables, I think I'll omit the peanut butter next time. I didn't put as much peanut butter as the recipe called for, however, there was still to much. I think next time I will just omit the peanut butter and sprinkle some diced peanuts. - 1/31/10
