Jalapeno-Cheese Mini Muffins

Ingredients
2 Tbsp splenda1 cup whole wheat flour1/2 cup all-purpose white flour1 cup cornmeal1 tsp baking soda2 tsp baking powder1/2 tsp salt1 1/4 cups skim milk1 1/2 Tbsp vegetable oil1 1/2 Tbsp fat free plain yogurt1/2 cup reduced fat sharp cheddar, shredded1/4 cup jalapenos, diced
Directions
Preheat oven to 375 degrees. Coat mini-muffin pans with nonstick cooking spray.

Stir together splenda, flours, cornmeal, baking soda, baking powder and salt. Stir in milk, oil and yogurt until the batter is moist by lumpy. Stir in cheese and jalapenos.

Fill the muffin cups. Bake 15 to 20 minutes until firm and beginning to turn light brown around the edges. Best served warm from the oven.
