Kripalu Oatmeal bread

1 cup rolled oats4.5 cups very warm water (this may be off, makes very very wet dough, may need to adjust down to get dough of appropriate consistency, but this is what they printed in the cookbook)2 tsp active dry yeast1/3 cup unsulphured molasses2.5 cups whole wheat flour3 cups unbleached white flour1/2 tbsp salt
1. In small bowl combine oats and 1.5 cups of water. Let stand 15 min
2. In large bow mix together remaining water with yeast and molasses. let stand 5 min. Mix both flours and the salt into the yeast mixture.
3. Add the oat mixture
4. let mixture stand for 10 min
5. on lightly floured surface, knead for 10 min
6. place dough in large lightly oiled bowl and cover with a clean cloth. set in warm space to rise. Let the dough rise 1-2 hours or until doubled., punch down
7. place down on lightly floured surface, punch down and knead for 10 min
8. place mounded dough into lightly oiled loaf pansl, cover and rise for 30-60 min or until the dough has risen 3/4 to 1 inch above the rim of the pan(s).
9. Preheat oven to 375 F. Bake loaves for at least 45 minutes
10. remove baked loaves from pans and let cool for 20-30 min on a wire rack.
