4 egg yolks1/3 cup granulated sugar1/4 fresh juice (grapefruit, orange, lemon, etc)dash of saltfruit(s) of choice (not included in calorie count)
Directions
In a bowl, combine the egg yolks, sugar, juice and salt. Beat until it turns pale yellow and starts to get airy.

Put over double boiler and continue to beat until it starts to stiffen. It should be about the consistency of whipped whipped cream and double in volume.

Pour 1/4-1/2 cup of zabaione over fruit and enjoy.

(Changing fruit will affect calorie outcome a little, fresh grapefuit juice was used to calculate calories. Strawberries, grapes and any other berries are great with this zabaione.)

Traditional Zabaione has fewer calories and less sugar. This is a good alternative if you are looking to NOT use marsala. I'd use a sweet red rather than grapefruit and still think I came out with a healthier end product. - 2/8/12

Mine either...if it isn't traditional food that got served to him as a child (i.e. meat and potatoes) he thinks it's "weird" lol.
